2cupscooked tri-color quinoa(cook it in vegetable broth instead of water for extra flavor)

2tbsplemon juice
2tbsptzatziki sauce
For the crispy garbanzo
1cangarbanzo beans
1tbspza'atar seasoning
1tbspolive oil
For the bowl toppings
1English Cucumber, diced into small cubes
2Roma tomatoes, diced into cubes
½cupFire-roasted peppers
1cupFire-roasted corn(If you're using frozen corn, run it under hot water to de-thaw and pat dry before sprinkling with oil, salt, and pepper. Pop it into the air fryer for 10 minutes at 400 degrees so it becomes a little crispy. Sprinkle with 1 tbsp of za'atar seasoning, plus ground pepper and sea salt.)

½cupTrader Joe's Mediterranean herb feta cheese
½cupdiced red onion
4tbspTzatziki sauce
4tbspHarissa sauce
Instructions
Prepare all the bowl ingredients and set aside. (You could combine everything into one giant bowl and mix up all the ingredients if you want to cut back on the number of dishes used, otherwise if you're entertaining, keep everything in separate dishes so each person can scoop however much of each ingredient they'd like to their bowl.)
Assemble the ingredients on top of the quinoa, and sprinkle a few shakes of za'atar seasoning over everything before digging in. Enjoy!
