Once you peel and cut the sweet potatoes into french fry-shaped strips, let them sit in a bowl of water for 20 minutes to an hour. This step is crucial, as it will help remove starch from the potatoes so they will be crispier in the end.
Coat your fries with truffle olive oil and rosemary. Add to the air fryer for 12 minutes on 400 degrees. After 12 minutes, pull out the fries from your air fryer and shake the pan to move things around. Put back into your air fryer for another 12 minutes on 400 degrees.
While the fries are cooking, prepare your condiments. I like to have one small dish with garlic roasted aioli and rosemary, and one small dish with ketchup.
Once they're done cooking, apply salt immediately, then dig in!
