Vegan Artichoke dip

Ingredients
  

  • ½ container of Trader Joe's garlic spread
  • 2 13.75 oz. cans of drained artichoke quarters
  • 2 tbsp diced chives or green onion
  • 1 16 oz bag of mini sweet peppers
  • 3 tbsp Harissa sauce, optional (Add if you want a kick!)

Instructions
 

  • Turn on the oven to 350 degrees.
  • Cut off the stems from the peppers then cut the peppers in half lengthwise and remove the seeds from the center. Arrange on a platter.
  • In a food processor, pulse the garlic spread with 1 can of artichoke hearts. Transfer to a mixing bowl and stir in the remaining artichoke quarters so it will have a chunky consistency. Spread the mixture into a shallow baking dish.
  • Bake for 20 minutes and let sit for a couple of minutes to cool down.
  • Top with diced chives/green onion to garnish. Dig in and enjoy!
