Blueberry, lemon, coconut, and banana waffles

Comforting Power Waffles

Ingredients
  

Batter
  • 2 tbsp plain greek yogurt
  • 2 tbsp coconut flakes
  • 1 tsp vanilla extract
  • 1 cup thawed frozen ripe bananas, mashed (4 bananas)
  • 1½ cups Kodiak Cakes blueberry lemon muffin mix

    (available on Amazon or at Target if you don't see it at your local grocery store)
  • 1 cup blueberries (I used frozen blueberries and just ran them under warm water so they'd thaw)

Method
 

  1. Heat up your waffle maker (I turned mine on to medium heat)
  2. In a large bowl mix together your eggs with the dethawed mashed ripe bananas, greek yogurt, coconut flakes, vanilla, and lemon zest. 
  3. Gently mix in the Kodiak Cake mix and blueberries.
  4. Spray your waffle iron with cooking spray.
  5. Pour a ladel-size scoop of your batter onto your waffle iron and cook at medium heat until the edges look browned and it’s a little crisp. (I had my batter on there for about 7 minutes)
  6. Spread creme fraiche on top and a small handful of blueberries, plus a sprinkle of cinnamon powder. Enjoy!
